BROCCOLI/CORN CASSEROLE 
1 (16 oz.) can Del Monte creamed corn
1 beaten egg
1 tsp. instant minced onions (more if fresh)
Dash of pepper
1 (16 oz.) pkg. frozen chopped broccoli, cooked & drained
1/2 c. coarse cracker crumbs (Ritz Better Cheddar)
2 tbsp. melted butter

Mix corn, broccoli, egg, cracker crumbs, onion, butter, salt and pepper. Put in casserole dish. Top with topping below.

TOPPING:

1 tbsp. melted butter
1/4 c. cracker crumbs

Combine and sprinkle over casserole. Bake, uncovered at 350 degrees for 35 to 40 minutes.
