GRILLED MARINATED SWORDFISH WITH
AVOCADO BUTTER
 
4 swordfish/salmon or halibut steaks
1/4 c. vegetable oil
1/4 c. soy sauce
2 tbsp. lemon juice
1/2 tsp. lemon peel
1 sm. garlic clove, crushed

(Optional: Serve with lemon wedges and parsley.)

AVOCADO BUTTER:

1/2 c. butter, room temp.
1/2 c. mashed avocado
5 tbsp. lemon juice
2 tbsp. minced fresh parsley
2 garlic cloves, minced
Salt

(Mix and serve in small bowl.)

Fish: Pierce on both sides with fork. Arrange in single layer in baking dish. Blend oil, soy sauce, lemon juice, peel and garlic. Pour over fish. Marinate 2 hours turning occasionally.

Preheat grill or preheat broiler. Drain fish - reserve marinade. Grill fish 9 minutes per 1 inch thickness. Brush often with marinade - turn once.

Garnish with lemon wedges and parsley. Simple but "gourmet" company dish.

I made this for my family tonight and it was delicious.. The avocado butter could probably be spread on many other dishes- it was sooooo yummy! Don't hesitate just make this dish, you will not be sorry!!
