SAVORY PEPPER STEAK 
1 1/2 lbs. beef round steak, cut in 1/2 inch strips
1/4 c. flour
1/4 c. shortening
1/2 tsp. salt
1/8 tsp. pepper
1 (8 oz.) can tomatoes
1 3/4 c. water
1/2 c. onion, chopped
1 sm. clove garlic, minced
1 tbsp. beef flavored gravy base
1 1/2 tsp. Worcestershire sauce
2 lg. green peppers, cut in strips

Mix flour, salt & pepper; coat meat strips. In large skillet, brown meat in shortening. Drain tomatoes, reserving liquid; combine with water, add water/tomato juice to meat mixture along with chopped onion, garlic and gravy base. Cover; simmer 1 1/4 hours or until meat is tender. Uncover, stir in Worcestershire sauce and green peppers. Cover; simmer meat and green peppers 5 minutes (more time is needed if well done peppers are preferred.) If gravy is too thin, combine 1 to 2 tablespoons flour with an equal amount of cold water, stir into sauce. Cook and stir until thickened and bubbly. Add drained tomatoes, cut up. Cook 5 minutes more. Serve over hot cooked rice. Serves 6.
