PRETTY AS A PICTURE BAKED
CHICKEN
 
1 whole fryer, washed and patted dry
Cavendars Greek Seasoning (or any other)
Rock salt
Oil

Preheat oven to 500 degrees. In bottom of large iron skillet, spread 1/2 inch rock salt. Loosen skin from chicken breast and rub with seasoning. Sprinkle chicken with seasoning. Rub chicken with oil. Fold wings under and tie legs with twist tie. Place on top of rock salt making sure bird is not touching sides of pan.

Bake in 500 degree oven for 15 minutes. Do not remove bird and turn oven down to 450 degrees for 30 minutes. Remove chicken from oven, cover with foil until ready to serve. (The rock salt prevents the juices from splattering - it does not season the bird). Serve in skillet.
