RHUBARB PIE (No Roll Crust) 
3 c. cut rhubarb
1 3/4 c. sugar
2 heaping tbsp. flour
3 eggs

CRUST:

2 c. flour
2 tbsp. sugar
1 tsp. salt
2/3 c. oil
3 tbsp. milk

Mix rhubarb, sugar, flour and eggs together and let stand while making crust. Combine oil and milk. Mix with dry ingredients until crumbly. Press into pie dish, reserving 1/3 of mixture for top. Pour rhubarb mixture into crust, sprinkle with reserved crumb mixture. Bake at 400 degrees for 10-14 minutes. Reduce heat to 350 degrees and continue baking another 40 minutes.
