MARINATED BUTTERFLY LAMB 
Leg of lamb (boned with all fat removed)

MARINADE:

Red wine
Fresh rosemary
Lemon juice
Pepper corns
Several cloves of garlic, chopped
2-3 tbsp. peanut or olive oil
Real onion, chopped

Marinate lamb 2 days, depending on taste (in or out of refrigerator). Cook on grill like steak until rare or pink.
