PEACH SALAD DELUXE | |
1 (3 oz.) pkg. lime gelatin 2 c. boiling water 3/4 c. cold water 1 c. peach halves 1 (3 oz.) pkg. orange gelatin 1/4 tsp. orange flavoring 1 (3 oz.) pkg. cream cheese, softened 1/2 c. chopped pecans (optional) Dissolve lime gelatin in 1 cup of boiling water. Add the cold water. Pour 1/2 gelatin into a ring mold and chill until syrupy. Drain the peaches, reserve syrup. Place peach halves cut side up in the mold and pour remaining lime gelatin over peaches. Chill until set. Dissolve orange gelatin in the other cup of boiling water. Blend in cheese and flavoring using a rotary beater to blend thoroughly. Add enough water to the peach syrup to make 3/4 cup and add to the cheese mixture. Chill until very thick then whip until fluffy. Stir in pecans. Spoon over the set gelatin in mold and chill until firm. Unmold to serve. |
