CHICKEN SALAD DELUX 
1 1/2 c. pkg. precooked rice
1/2 tsp. salt
1 1/2 c. boiling water
2/3 c. mayonnaise
1/3 c. French dressing
1 tsp. salt
1/8 tsp. pepper
1 1/2 c. diced cooked chicken
1 c. diced celery
1 c. drained diced orange sections
1/2 c. coarsely chopped walnuts

Add rice and salt (1/2 teaspoon) to boiling water. Mix to moisten all rice. Cover and remove from heat. Let stand 5 minutes. Then remove uncover and let cool to room temperature.

About an hour before serving combine mayonnaise, French dressing, 1 teaspoon salt and pepper; mixing well. Combine the other ingredients in a bowl. Stir in mayonnaise mixture. Add and mix lightly with a fork. Chill serve on crisp lettuce. (If desired 1 cup drained diced pineapple or 1 1/2 cups halved seeded grapes may be used instead of orange sections.)
