CARROT CAKE AND CREAM CHEESE
ICING
 
2 c. sugar
2 c. plain flour
1 lg. can crushed pineapple, drained
1 1/2 c. oil
1 tsp. baking soda
3 c. grated carrots
3 eggs
1 tsp. salt
1 tsp. cinnamon

ICING:

2 (8 oz.) pkg. cream cheese
1 box 4X sugar
1 stick butter
1 tsp. vanilla

Mix all ingredients together. Pour into three 8-inch round pans, greased and floured. Bake at 350 degrees for 35 minutes.

For icing, let cream cheese and butter soften slightly. Blend with sugar until creamy and add vanilla.
