SWEET POTATO SOUFFLE II | |
1 stick butter 3/4 c. sugar 1/2 tsp. vanilla 1 egg 1/2 c. milk 3 c. or 2 lg. cans (drained) mashed sweet potatoes Mix all ingredients together. If using canned sweet potatoes, warm them first before putting in the butter, so it will blend better. Put in 1 1/2-quart casserole. TOPPING: 3/4 c. self-rising flour or Bisquick 1/3 c. butter 1/2 c. brown sugar 1 c. pecans In a small bowl mix all ingredients with your hands. Spoon on top of sweet potatoes. Bake at 350 degrees for 30 minutes. Serves 6. |
