SUGAR FREE PINEAPPLE CHEESECAKE 
3 cans (14 oz. each) sliced pineapple in natural juice (unsweetened), drained (reserve juice)
3 env. Knox unflavored gelatin
3 pkg. (8 oz. each) cream cheese

Mix reserved juice with enough unsweetened apple juice to equal 3 cups. Bring to boil. In a large bowl, add boiling liquid to gelatin and stir until gelatin is completely dissolved. With electric mixer, beat in cream cheese until smooth.

In food processor, chop pineapple slices and stir chopped pineapple into cream cheese mixture. Turn into springform pan and chill until firm.
