MICROWAVE BBQ CHICKEN BREAST | |
2 pkg. (2 1/4 to 2 1/2 lb.) skinless boneless chicken breast 3/4 c. barbecue sauce (Hunt's Original) Salt, pepper & Cajun seasoning Clean chicken of fat, skin, bone or gristle. Fold lengthwise and place in large shallow Corning Ware (or other microwave safe dish) where they are only one breast deep. Lightly salt, pepper as desired; sprinkle Cajun seasoning over chicken and then cover all pieces with barbecue sauce. cover and cook on low for 45 to 60 minutes depending on how low, low is. For hors d'oeuvres, use the breast tenderloins in place of the main breast pieces (remove small tendon). Use spoon and fork to separate when done. Serve hot. |
