SPANISH RICE 
4 slices bacon, diced
3 tbsp. chopped green pepper
2 tbsp. chopped onion
1 c. rice
1 (No. 2) can tomatoes
1/4 c. water
1 tsp. salt
1/4 tsp. pepper

Partially fry bacon. Add green pepper and onion until onion is brown and bacon is crisp. Add tomatoes, water, salt and pepper. Cook. Melt shortening in fry pan. Add rice and stir until golden brown. Remove form heat; add remaining ingredients. Mix well. Cover and simmer over low heat for 30 minutes or until rice is tender. Keep covered until ready to use.
