MAYONNAISE CAKE WITH SEVEN
MINUTE FROSTING
 
1 c. white sugar
1 c. plain flour
2 tsp. baking soda
1 c. mayonnaise
1 c. cold water
1 tsp. vanilla
2 tbsp. seedless blackberry jam
4 tbsp. cocoa

Mix sugar, flour, soda, cocoa together. Add mayonnaise, jam, and water. Bake at 325 degrees for 45 minutes in tube pan, greased and floured.

SEVEN MINUTE FROSTING:

2 egg whites
1 1/2 c. sugar
1 1/2 tsp. light corn syrup
1/3 c. cold water
Dash of salt
1 tsp. vanilla extract

Put all ingredients except vanilla in double boiler and cook, beating occasionally with mixer, until mixture forms peaks. Cook about 7 minutes. Remove from heat and add vanilla; beat until spreading consistency.
