CUCUMBER AU GRATIN | |
3 med. cucumbers, peeled and cut in sm. dice 2 tbsp. butter 2 tbsp. flour 1 1/4 c. milk 1 chicken bouillon cube 1/4 tsp. onion juice or grated onion Salt and pepper to taste 1 c. mild cheese, grated 1/3 c. buttered bread crumbs Cook cucumbers about 5 minutes in barely enough salted boiling water to cover; drain well. Make a cream sauce of butter, flour and milk stirring constantly until smooth. Stir in bouillon cube and onion and season sauce to taste. After bouillon cube is completely dissolved, add cheese and simmer until melted, stirring constantly. Add cucumbers and pour in small greased casserole. Top with buttered crumbs and bake in moderate oven 350 degrees about 20 minutes or until brown. |
