FISH CAKES 
2 c. canned tuna, drained
1 c. cooked brown rice or cracker crumbs
1 egg, beaten
1 sm. onion, minced
1 tbsp. lemon juice
3 tbsp. melted butter or unrefined vegetable oil
1 c. finely ground nuts

Combine all ingredients except nuts. Mix well and form into patties. Roll in ground nuts and place on oiled baking sheet. Bake at 350 degrees for 15 minutes or until brown and bubbly. Serves 4-5.
