CHILI 
5 lb. ground beef
1 1/2 qt. water
3 oz. chili powder
1 tbsp. salt
1 tbsp. cumin
1 tbsp. oregano, grind in hand
1 tbsp. paprika
1/2 tsp. cayenne pepper
2 cans pinto or kidney beans (optional)
1 to 2 finely chopped jalapeno peppers

Braise meat. Add meat to boiling water, lower heat, add spices and mix thoroughly. Cook for 45 minutes to 1 hour, stirring occasionally. About 10 minutes before completing, add 2 tablespoons flour or cornstarch. Add beans. Eat right away or (if you can) let it age awhile. Freezes well. Goes great with French bread.
