CHICKEN AND BLUE CHEESE | |
2 whole chicken breasts Toothpicks butter 1 egg Milk Bread crumbs Blue cheese Preheat oven to 450 degrees. Bone and skin chicken breasts into large cutlets. Pound meat to flatten. Dab a bit of butter on each cutlet for moistening. Sprinkle liberal amounts of blue cheese on top of the cutlets. Roll up each cutlet and hold together with toothpicks. Dip into egg and milk mixture and then into bread crumbs to coat the outside all around. Bake for 40 to 45 minutes uncovered. Serves 2. |
