RED FISH CHOWDER | |
1/4 c. oil 1 onion, chopped 1/4 c. chopped celery 1/4 c. chopped green pepper 1/4 c. diced peeled carrots 3/4 c. peeled potato 1 1/2 tsp. chopped parsley 1 tsp. thyme 2 sm. bay leaves 1 1/2 tsp. garlic powder 1 1/2 tsp. seasoned salt 1/4 tsp. pepper 1 c. crushed tomatoes 1 c. tomato sauce 1 c. ketchup 1/4 lb. clams 1/2 lb. white fish (cut in chunks) Heat oil; add onion, celery, green pepper, carrots and potatoes; saute until tender. Add parsley, thyme, bay leaves, garlic powder, salt and pepper. Simmer 5 minutes. Add crushed tomatoes, tomato sauce and ketchup. Bring to boil. Simmer 30 minutes. Add clams and fish. Simmer until fish is flaky. If too thick, add fish stock or clam juice. Makes 6 servings. |
