SOPAIPILLAS 
3 c. unsifted all purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
3 tbsp. butter or shortening
3 eggs
1/4 c. sugar
1/3 c. water
Oil for deep frying
Honey or 1/2 cup sugar mixed with 1 tsp. cinnamon

Sift the flour, baking powder, and salt into a bowl. Cut in the butter or shortening with a pastry blender or two knives until mixture resembles coarse meal. Beat the eggs and sugar together very well and add to the dry ingredients with enough water (about 1/3 cup) to make a soft dough. Knead on a floured board until smooth and elastic, about 10 minutes or longer. Roll out the dough to a 1/8 inch thickness and cut into 3 inch squares. Deep fry 2 or 3 at a time in cooking oil (heated to 360 degrees) for 2 1/2 to 3 minutes, turning often to brown evenly. Drain on paper towels. Roll in cinnamon sugar mixture and dip in the honey.
