PINEAPPLE MUFFINS 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1 egg
1 c. crushed pineapple, drained
1/4 c. shortening

Sift flour, add baking powder and salt. Sift again. Cream shortening. Add sugar gradually, continue beating until light and fluffy. Add egg and beat well. Stir in pineapple. Add flour mixture and stir just until moistened. Do not beat.

Pour into muffin cups. Bake at 400 degrees for 20 to 25 minutes. Makes 12 to 15 medium muffins.
