PINEAPPLE NUT UPSIDE DOWN
MUFFINS
 
1/4 c. brown sugar, packed firmly
2 tbsp. butter, melted
12 nut halves
1 1/4 c. flour
3 1/2 tsp. baking powder
1 tsp. salt
1/3 c. sugar
1 1/2 c. 40% Bran Flakes cereal
1 (8 oz.) can crushed pineapple, undrained
1/4 c. vegetable oil
1/2 c. chopped nuts
1/4 c. milk
1 egg

Combine brown sugar and butter. Place scant teaspoon into each of 12 greased 2 1/2 inch muffin pan cups. Place nut half in each. Sift together flour, baking powder, salt and sugar. Set aside.

Measure cereal, pineapple and milk into large. Mix well. Let stand about 2 minutes. Add egg and oil. Beat well. Stir in chopped nuts. Add flour mixture, stirring only until combined (batter will be thick). Portion evenly into muffin-pan cups. Bake at 350 degrees for 20 minutes or until done.
