PINEAPPLE-RICE MUFFINS 
1 c. brown rice flour
2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. guar gum
1/2 c. unsweetened, crushed pineapple, drained
1/2 c. unsweetened pineapple juice (plus 2 tbsp. or more, if needed)
2 tbsp. oil

For a change, use white rice flour, which makes a muffin of an entirely different texture. Look to purchase brown rice flour and guar gum in health food stores.

Coat 8 or 9 regular size muffin tins with non-stick cooking spray; set aside.

In large bowl, mix dry ingredients together. In a separate bowl, mix together the wet ingredients and pour into the dry, mixing well. Ladle into prepared muffin tins and bake in a 400 degree oven for 25 minutes. Remove from oven and let partially cool before turning out. Yield: Makes 8 or 9 muffins.
