PINEAPPLE MUFFINS 
1 egg
1/4 c. butter, softened
1/4 c. sugar
1 c. sour cream
1 1/2 c. flour
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1 c. well-drained crushed pineapple

Mix egg, butter, sugar and sour cream until light. Sift flour, baking soda, baking powder, salt, and nutmeg. Blend into egg mixture. Stir in pineapple. Fill 12-15 paper muffin cups and bake at 375 degrees for 15-20 minutes.
