CORNED BEEF SALAD 
1 env. unflavored gelatin
1 1/2 c. tomato juice
1 c. mayonnaise or salad dressing
1 tsp. lemon juice
1 (12 oz.) can corned beef, finely flaked
1 c. chopped celery
1 hard cooked egg, chopped
1 tsp. chopped onion

Soften gelatin in 1/4 cup cold water. Meanwhile, bring tomato juice to boil; add gelatin. Stir in mayonnaise and lemon; chill partially set. Fold in rest of ingredients. When set, turn onto lettuce or spinach leaves and garnish with hard boiled egg slices.
