MINI CHEESECAKES 
Graham cracker crumbs
2 (8 oz.) cream cheese
1/2 c. sugar
3 egg yolks

Sprinkle graham cracker crumbs in ungreased mini muffin pans. Mix remaining 3 ingredients well. Beat egg whites and fold in. Fill muffin pan 3/4 full and bake at 350 degrees for 15 minutes. Take out and allow cakes to fall.

TOPPING:

1 c. sour cream
3 tbsp. sugar
1/2 tsp. vanilla
Maraschino cherries

Mix sour cream, sugar and vanilla. Put 1/2 teaspoon of above mixture on top of cakes. Return to oven and bake at 400 degrees for 5 minutes. Let cool. Remove from pans and place 1/2 maraschino cherry on top.
