SOUTHERN FRIED CORN SUPREME | |
This is a delicious dish and my friends & family just beg me to fix it all of the time. 2 cups breaded okra (may buy frozen) 3 slices bacon 1/2 onion, chopped 1/2 green pepper, chopped 4 oz. mushrooms, sliced (optional) 3 tbsp. butter 1 (15 oz.) can corn, drained seasoned salt and pepper, to taste Deep fry breaded okra (is best in butter flavored Crisco). While okra is frying, fry bacon to where it's brown but not too hard. Cut onions and green peppers into small pieces. Slice mushrooms. Melt butter in large skillet. Sauté onions, peppers and mushrooms (if desired) for 1 to 2 minutes on medium heat. Add can of corn to sautéed vegetables and fry for 4 to 5 minutes or until corn has some of the juice cooked out of it. You can add your okra as soon as it's golden brown to the corn mixture.
