CHICKEN ROQUEFORT 
This quick and easy recipe may be increased to accommodate the number of people to be served. This done in a microwave to finish.

2 boned whole chicken breasts (4 pieces)
Pam
1/4 c. peanut oil
1 stick butter, melted
1 c. fine bread crumbs
1 (4 oz.) pkg. Roquefort or Bleu cheese, crumbled
1/2 c. Bleu cheese dressing
Salt and pepper to taste

1. Saute chicken in skillet with Pam and peanut oil about 10 to 12 minutes. Drain.

2. Melt butter in microwave. Add half of the bread crumbs, the crumbled cheese and Bleu cheese dressing. Mix well. Slowly add remaining bread crumbs until the mixture holds and is not runny.

3. Place chicken pieces in microwave dish. Pat on cheese and crumb mixture, thoroughly covering the top of chicken. Cover and microwave at 100% power for 5 minutes.

Serve with rice or pasta and fresh vegetables.

Since microwave ovens vary in power, you may need to adjust your cooking time.
