SMOKY MOUNTAIN MACADAMIA FRENCH
TOAST
 
4 eggs
2/3 c. orange juice
1/4 c. sugar
1/3 c. milk
1/4 tsp. nutmeg
1/2 tsp. vanilla
1 loaf (8 oz.) French bread, cut in 1 inch slices
1/3 c. butter, melted
1/2 c. macadamia nuts, diced

Using wire whisk, beat together eggs, orange juice, sugar, milk, nutmeg and vanilla. Place bread in single layer in tight fitting casserole. Pour milk mixture over bread. Cover and refrigerate overnight, turning once. Pour melted butter on a jelly roll pan, spreading evenly. Arrange soaked slices of bread in single layer on pan. Sprinkle on nuts. Bake in a preheated 400 degree oven for 20 to 25 minutes until golden. Serve with ham or bacon. Serves 6.
