BROCCOLI, MUSHROOM & RAISIN
SALAD
 
4 c. broccoli florets
1 c. sliced mushrooms
1 c. raisins
6 slices bacon, cooked crisp & crumbled

DRESSING:

1 lg. egg
1/2 c. sugar
1 1/2 tsp. cornstarch
1 lg. egg yolk
1/2 tsp. dry mustard

In small bowl whisk eggs, cornstarch, sugar and mustard. In a saucepan combine 1/4 cup vinegar, 1/4 cup water and 1/4 teaspoon salt. Bring to boil until thick; whisk in egg mixture. Remove from heat and whisk in tablespoon butter and 1/2 cup mayonnaise. Pour cold dressing over salad items. Add salt and pepper to taste. Keep refrigerated.
