COCONUT DATE BALLS 
2 eggs, well beaten
1/2 c. butter
1/2 lb. dates, chopped
1/2 c. walnuts or pecans (optional)
1 1/2 c. Rice Krispies
1 tsp. vanilla

In a medium saucepan, combine eggs, butter and dates. Cook over low heat. Boil 2 minutes. Remove from heat. Add Rice Krispies, nuts and vanilla. Cook 5 minutes. Shape into 1-inch balls and roll in the coconut. 2 1/2 dozen.
