FROSTED CARROT BARS 
4 eggs
1 cup brown sugar
1 cup white sugar
2 cups sifted flour
1 1/2 cups vegetable oil
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 cups grated carrots
1 1/2 cups flaked coconut
1 1/2 cups walnuts

Preheat oven to 350°F.

In a medium bowl, sift flour with baking soda, cinnamon and salt.

In a larger mixing bowl, beat eggs until light and fluffy. Beat in sugar gradually, alternately adding oil and flour mixture. Beat for 30 seconds or until smooth. Fold in carrots, coconut and walnuts.

Pour into a greased and lightly floured 13x9x2-inch pan. Bake in preheated oven for about 25 — 30 minutes.

Icing:

3 oz. cream cheese
1 tbsp. milk
1/8 tsp. salt

Add:

2 1/2 cups 10X sugar
1 tsp. vanilla

Frost while still warm.
