PHYLLIS MAX'S RICE PUDDING 
2/3 c. uncooked rice = 2 1/2 c. cooked rice
1 pkg. vanilla pudding
3 1/2 c. milk
1 tsp. lemon juice
1 tbsp. sugar or 1 tsp. vanilla
1/3 to 1/2 c. raisins
2 eggs, beaten

Cook rice with 1/2 cup of the milk along with 1 cup of water until tender. To cooked rice, add all ingredients. Grease casserole; pour mixture into casserole, sprinkle with nutmeg and cinnamon. Bake 1 hour at 350 to 375 degrees. Great!
