FRUIT JUICE JELLY 
4 c. unsweetened apple, grape, or orange juice
1 3/4 oz. pkg. powdered fruit pectin
1/4 c. lemon juice
4 1/2 c. sugar

In 8-10 quart kettle combine fruit juice, pectin and lemon juice.

Bring to a full rolling boil.

Boil hard uncovered for 1 minute, stir constantly.

Remove from heat quickly.

Skim off foam.

Ladle fruit syrup into hot sterilized jars.

Leave 1/2 inch head space. Seal with metal lids or paraffin.

Makes 6 1/2 pints.
