SPICED WALNUT BRITTLE | |
2 c. sugar 1/2 c. light corn syrup 1/4 c. water 2 tbsp. butter, softened 1 1/2 tsp. vanilla extract 1 tsp. baking soda 1 tsp. ground cinnamon 2 c. walnut pieces Butter cookie sheet, set aside. In 2-quart glass microwave at high 100% for 5 to 6 minutes until boiling; stir. Microwave at high additional 6 to 10 minutes or until temperature reaches 290 degrees (hard crack stage). When bubbling stops, stir in butter, vanilla, baking soda, cinnamon and walnuts. Pour immediately onto prepared cookie sheet; quickly spread thinly. Cool until hard. Break into pieces. About 1 1/2 pounds. NOTE: Hard crack stage is reached when a small amount of syrup dropped into very cold water separates into threads that are hard and brittle. |
