SPICED WALNUT BRITTLE 
2 c. sugar
1/2 c. light corn syrup
1/4 c. water
2 tbsp. butter, softened
1 1/2 tsp. vanilla extract
1 tsp. baking soda
1 tsp. ground cinnamon
2 c. walnut pieces

Butter cookie sheet, set aside. In 2-quart glass microwave at high 100% for 5 to 6 minutes until boiling; stir. Microwave at high additional 6 to 10 minutes or until temperature reaches 290 degrees (hard crack stage). When bubbling stops, stir in butter, vanilla, baking soda, cinnamon and walnuts.

Pour immediately onto prepared cookie sheet; quickly spread thinly. Cool until hard. Break into pieces. About 1 1/2 pounds. NOTE: Hard crack stage is reached when a small amount of syrup dropped into very cold water separates into threads that are hard and brittle.

Since microwave ovens vary in power, you may need to adjust your cooking time.
