SPICED WALNUT BRITTLE 
2 c. sugar
1/2 c. light corn syrup
1/4 c. water
2 tbsp. butter, softened
1 1/2 tsp. vanilla
1 tsp. baking soda
1 tsp. cinnamon
2 c. walnut pieces

Butter cookie sheet; set aside. In 2 quart microwave-safe measure or bowl, mix sugar, corn syrup and water. Microwave at high (100%) 5 to 6 minutes until boiling; stir. Microwave at high additional 6 to 10 minutes or until temperature reaches 290 degrees (hard crack stage). When bubbling stops, stir in butter, vanilla, baking soda, cinnamon and walnuts. Pour immediately onto prepared cookie sheet; quickly spread thinly. Cool until hard. Break into pieces. Makes 1 1/2 pounds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
