Chocolate Oatmeal No-Bake Cookies

 Jennifer (North Carolina) says:
I have made these cookies so many times, I don't even need to measure the ingredients anymore. We always called them peanut butter delight in my family. We did away with dropping out the cookies and just poured them into a pan to cool and then cut them up. It works well if you have to make several batches at once. I live in Asia now for work and these cookies are a bit of home. It is one of the few baked goods that I can find all the ingredients for and make without an oven.

This is a great recipe. I was looking for a cookie recipe to make that didn't require flour. I didn't want to run to the store for just one item! Anyway, I cooked the cocoa, milk, butter, and sugar for three minutes, instead of one and substituted old fashioned oats instead of quick oats. They are chewier with the old fashioned oats, but still very good. Thank you.

This are very good cookies and it is my first time making them, as we don't have them in my country. I took out one cup of sugar and and added dried cranberries and a little sesame seeds, but no peanut butter (because it didn't sound like it would go well with the cranberries. Also I used the "Country Choice organic hot cereal" multi grain - rye, barley, oats, wheat - from Trader Joe's)

The reason I made the changes are because of weight watching, but it still came out really really good :)

To make the no-bake cookies harden, try cooking them in the microwave. They come out perfect every time.

I've made these several times & carefully followed the recipe & they always end up dry & crumbly. Any ideas of what I'm doing wrong?

 Pam (Alabama) replies:
This has happen to me before. They need to boil only one minute from start to finish. If longer they will be dry and crumbly.

I too do this cookie recipe, so much you dont need to measure, you can make them with quick or rolled oats. I sweeten them to taste. First I melt the butter and peanut butter the crunchy stuff works, add vanilla careful not to burn too hot, mixture must melt then add sugar to taste and cocoa powder it will look like melted chocolate no lumps smooth. Splenda or other sweeteners can be used. This will make a dryer cookie. While mixture is warm add oats and mix em in, drop by spoonfuls on waxed covered cookie sheets, refrigerate, until cool. Walmart has a version of these but they don't compare to homemade!

I really like these cookies but I was wondering if you could use nutella instead of peanut butter?

This is a classic recipe, been around for ages. Also good with almond extract and almond slivers with coconut as well. Can omit the vanilla as well. In place of peanut butter you can use Nutella with hazelnuts too very tasty.

 Colette (New Brunswick) replies:
For variation, you could use Nutella instead of the peanut butter, no cocoa needed and be creative.. This is one the easiest cookies to do...I throw in coconut or cornflakes, in fact, any kind of cereals once in a while.. Enjoy!

Noticed some people having trouble getting the mix to set up, others can't get it to work in rainy weather..... The secret is this: see Belle's recipe "No Bake Chocolate Oatmeal Cookies", the one where the search results description reads..."...combine sugar, milk, butter, salt, syrup.....stir constantly until mixture reaches the softball stage..." That - bringing to softball stage - is the key step for perfect texture with this recipe, every time.

 Beth (United States) says:
I melted my swiss chocolate and everyone raved. But some commented that they are too sweet. I will cut the sugar next time...and increase the peanut butter to compensate.

 Debbi (United States) says:
My Aunt made these when I was a very small child. I have made these cookies for 40 years, always loved them, kids and grandkids. They left out one thing, dash of salt. Because it is so sweet the salt offsets the too sweet... I have added small amount of crushed salted nuts, and its just enough. I have only brought to a boil for 1 min. before its ready to add oats and take off the stove. Just my 2cents worth. ;>

 Cathy (Tennessee) says:
I love this recipe! My mom used to make it but used graham cracker crumbs instead of oatmeal. The texture was smoother... I love them either way... Just make sure to have plenty of milk on hand!!
