“CHOCOLATE OATMEAL NO-BAKE COOKIES” IS IN:

CHOCOLATE OATMEAL NO-BAKE
COOKIES
 
2 cups sugar
1/2 cup cocoa
1/2 cup (1 stick) butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

I worked as a cook at a childcare center. We had a child that could not have milk products or peanuts. I substituted soy milk and soy butter (instead of peanut butter). I also used a butter substitute. These turned out tastier than the original recipe. It was the vegetarian version, I guess you could say. Her momma was very happy to find a cookie recipe should could make and the whole family could actually enjoy.

Can I use sunbutter instead of peanut butter? What about soy milk instead of regular? I have a little guy with dairy and nut allergies, so I'm going to try to modify this. Please let me know if you've tried it and it won't work. Thanks!

For people who don't or can't eat dairy products you can use soy or rice milk. It works fine. Just remember if you use any kind of bar or chip chocolate, a lot of those products contain some kind of milk product.

This is also great with a few substitutions to make it dairy and peanut free: rice milk, soy free buttery spread, and sunflower butter. Consistency is the same and the flavor is still great!

I have been making these cookies for over 40 years. 2 of my grandchildren are dairy intolerant so I substitute Soy milk for the mild and use Fleischmann's unsalted margarine (contains soy, but no milk) for the butter.

Karra, I have made these with soy milk and I also used Best Life olive oil based butter because my son has a milk allergy they turned out OK they are good, but they do have a different taste then what I am sure most are use to. But they still taste good and they actually set up real well

I have been enjoying these cookies since childhood and now I make them with my own kids. I have successfully substituted many of the ingredients and they always turn out great! I have used splenda or honey instead or sugar, soy milk instead of cows milk, sun butter instead of PB (my som has a peanut allergy) smartchoice instead of butter, old fashioned oats instead of the quick cooking. I almost always put them in the refrigerator to set though and they always turn out perfect!

Coconut oil can be substituted for the butter, almond butter for the peanut butter and vanilla soy milk for the cow's milk. You can even make these with just 1.5 cups sugar and they still taste sweet! DO boil 2 minutes for the right consistency.

Vegan recipe using cane sugar, soy milk, pure cocoa and vegan butter. I used organic p-nut butter and added slivered almonds. Measurements stay the same. Healthy in btwn meal snack. All gone!!

My oldest daughter Julie Beth made the chewiest version ever when she was about 16 years old. I came home to find a wonderful platter of No-Bake cookies on the table and when I bit into one I found chewy little rubber bits. And in the next one and the next one..Come to find out, she had stirred the boiling mixture with a rubber spatula which of course melted into little bits into the mixture. Nevertheless,she finished the batch and made the platter of cookies. And yes-I ate them,spitting out the chewy little rubber bits as I ran across them. Her husband to this day insists it wasn't her coooking that attracted him-or keeps him around.

Rolled oats are exactly what is called for in the recipe. The "old fashioned" oats are in larger flakes; the "quick oats" are smaller, and a little thinner so they cook faster. You can use the old fashioned rolled oats as they are or use a blender or even a mixer to break up the flakes a little prior to mixing in other ingredients. You could also simply use a knife to chop the oats slightly.

We made these when we were kids and we called them Cumi cookies, A lady named Cumi gave us the recipe and the rumor was she made the cookies for her husband and put a little arsenic in each batch trying to get rid of him. But without the arsenic. They are great with peanut butter, with coconut or nuts. Easy to make and send to school for a get together.

The cookies made by this recipe are delicious! I made these for Mother's Day for my Mom who is at work today. They are simple to make and they don't require baking! The only downer I had with them was... I only got six made out of this recipe and it's proportions. But I will probably make more later. They were very simple because I made them by my self and I am only 14! Thank you to whoever wrote this recipe!!

Love the no bakes in our family reciepe we have always added coconut and raisins to ours. I have been using crunchy peanut butter, the extra little nuts in there totally make a difference.....I love these. I was dreaming about them last night so off to the market to gather my supplies. I'll be making a huge batch some to eat now some to freeze.....these freeze wonderfully if you didn't know so there is my tips. Raisins coconut crunchy peanut butter and big batches to freeze for another day!

As far as them not setting up, I have to use stick butter or margarine (not tub butter), make sure you take them off the burner when you add in the last ingredients. My recipe calls for the butter at the end. A little more oats will set them up or a great trick is to add a little powdered sugar to help them set if it looks like they are too soft.

I used 1/2 the sugar and 1/2 the butter. I added 1/3 cup flax seed. I used reduced fat peanut butter. I also used "good" cocoa. It tasted great and saved a few calories and fat grams.
