“CHOCOLATE OATMEAL NO-BAKE COOKIES” IS IN:

CHOCOLATE OATMEAL NO-BAKE
COOKIES
 
2 cups sugar
1/2 cup cocoa
1/2 cup (1 stick) butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

Use stevia sugar replacement instead of splenda, much healthier. Equal amount even can use (i.e.) 3/4 cup instead of 1 cup of sugar in recipes.

If you are having problems getting this to set on a hot/humid day or rainy day just add 3/4 c. additional oats.. They set right up in no time, plus you get more product

Rolled oats is all I ever use. And too, if you are having trouble with them getting firm, either boil and extra minute or add another 1/2 cup of oats or both if needed. I make these into "bar cookies" and they always get firm. This recipe is very forgiving if you need to adjust it.

I have made these cookies since I was 11 (now 57). I always use chunky peanut butter and I always put in coconut. Also I have used either quick OR regular oatmeal. Just go by the reciepe for the rest and you can never go wrong. They cool quick so spoon out quick. They freeze good too!

My recipe is: 4 tbsp. powdered cocoa, 1/2 c. milk, 2 c. sugar, 1 stick margarine (not soft butter). Boil 1 minute. Remove from heat and add 2 1/2 c. quick oatmeal (dry) and 1/3 c. crunchy peanut butter. These never fail but you have to let the mixture get to a FULL ROLLING BOIL and then start the time for 1 minute (more cocoa and more oatmeal only makes them too dry). I've tried different combinations and this works without fail. Everyones favorite cookie.

I'm 54 and my grandmother in Kansas made these too. My all time favorites! I tried them a while back with Splenda Trademark and it doesn't work.I'm pre-diabetic also. I'll try the zylitol.

Great cookies, heck who can wait 30 min? eat em hot. I also cut back on the butter to around 1/2 - 3/4 stick and still good. add M&M's at the end as well 3/4 cup or more MMMMMMM! I also try not to over cook so they are a little chewy. just a bubble boil not a full rolling boil. also canned evaporated milk is good and gives it a little more milk chocolate flavor. Real Butter is always Better

I love to make these cookies - but before they set pour the mixture over vanilla ice cream. It will harden some on the ice cream, but is similar to hot fudge! YUM!
