“CHOCOLATE OATMEAL NO-BAKE COOKIES” IS IN:

CHOCOLATE OATMEAL NO-BAKE
COOKIES
 
2 cups sugar
1/2 cup cocoa
1/2 cup (1 stick) butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

I always add more oats (4 or 4.5 cups) and a little bit of whatever I have laying around - today: sesame seeds, mac nuts and sunflower seeds. I *imagine* this makes them healthier.

I use 1 cup brown sugar and 1 cup white sugar. It makes them a little richer, in my opinion. I also let them sit in the pan with the lid on for a few minutes before dropping them as individual cookies; I think that helps them set up better.

My grandmother used to add about one cup cocoa crispies. It made the cookies a little less dense and gave them a nice crunch. Just be sure to add the Coco crispies last because they don't absorb the moisture.
