BROCCOLI SOUP 
1/2 c. chopped onion
1 (4 oz.) can mushroom pieces
3 tbsp. butter
1 can cream of mushroom soup
1 (6 oz.) pkg. garlic cheese
Juice of 1/2 lemon
1/4 tsp. black pepper
1/2 c. chopped celery
1 (10 oz.) pkg. frozen chopped broccoli, cooked, drained and mashed
Hot pepper sauce to taste
2 tbsp. white wine (optional)

In a large heavy saucepan saute' onion, celery and mushrooms in butter. Add to cooked and mashed broccoli. Mix in soup, cheese, lemon juice, pepper and pepper sauce. Heat until cheese melts, stirring frequently. Add 6 ounces of water and stir until well mixed. At this point wine may be added. Stir until mixed. Serve hot. Serves 4 to 6.
