EASIEST HAM BONE SOUP EVER
16 oz. dried beans (I used Navy)
1 ham bone
6 cups water

Soak beans 6-8 hours overnight in 6-8 cups of water (or follow "quick soak" directions on bean package or use canned/jarred beans). Drain.

Put soaked beans, 6 cups water and ham bone in slow cooker. Cook on low 8 hours or as long as you can stand it.

Serve with corn bread, if desired.

If you're like me, you're skeptical that this will make anything worth eating, but it turns into a thick, delicious, flavorful soup.

Cooks Note: As the soup simmers, we add extra flavoring ingredients, such as pressed garlic cloves, bay leaves, baby carrots, chopped onions and celery, herbs such as basil and oregano, etc.

I added carrots, celery, onion and different herbs; I was still worried that the soup would be thin and runny; I was very surprised to see that I was wrong-very delicious! Who would of thought some water beans, veggies and a ham bone would turn into a thick yummy stick to your bones soup.

I've been using a recipe like this forever. I cook my bone and beans in chicken broth, or a mix of broth and water. I add lots of baby carrots about halfway through the day (too early and they disintegrate) and a package or two of sliced mushrooms about an hour or so before the end. I'll often brown a pound of bulk sausage (we prefer hot sausage) and add that, too. I use the 15-bean mix. Wifey likes it when I add a large can of diced or crushed tomatoes.

This is a fabulous recipe! Super easy and great for a cold day. I doubled the beans and the water because we have a large family and it worked just fine. We lost electricity about halfway through cooking so I had to move it to a large pan on the stovetop. I covered it and just kept adding water and it took about the same 8 hours 4 in the crockpot and 4 on the stovetop. Great recipe, will definitely be using again!
