“OVEN FRIED CAJUN CHICKEN” IS IN:

OVEN FRIED CAJUN CHICKEN 
1 frying chicken or 6 breasts or 6 leg thigh quarters
1 cup flour
black pepper and garlic powder (for sprinkling)
Creole seasoning
paprika
cayenne pepper
1/2 cup butter

Preheat oven to 425°F.

Pat chicken dry with a clean paper towel and sprinkle with garlic powder and Creole seasoning.

In a Ziploc bag, combine 1 cup flour, 1/4 teaspoon black pepper, a pinch of cayenne pepper (optional - adjust heat as desired), 1/2 teaspoon paprika and 1/2 teaspoon Creole seasoning. Close bag and mix well.

Shake chicken in the bag with flour and seasonings. Line a 9x13 inch glass baking dish with foil. Add butter and place in oven until it sizzles. Place chicken in dish, skin side down.

Bake 30 minutes; reduce heat to 325°F degrees and bake 35-45 minutes longer or until chicken is cooked through (this depends upon the weight of the chicken). It will be a beautiful golden brown and very tender when done.

My family loved this recipe. It was very easy to make and had a wonderful smell while it was cooking. The best thing was my 9 yr. old son , who has eating issues, told me it was the best thing ever and when were we having it again.. I also made sure to pat the chicken dry at beginning.

Totally agree, EXCELLENT! Would be better had I used chicken pieces versus boneless skinless breasts. Increase the Cajun seasoning and it is perfect!

Wow this recipe was delicious!! The only change I made was I cooked the chicken a little longer at 425°F to make it even crispier. I have tried oven-fried chicken before and it always resulted in a soggy mess! But this chicken was golden brown and crispy on the outside, while tender and juicy on the inside! 5 stars!!!!

I just put a little butter on each leg and put soulfood seasoning on them and bake uncovered for about 1 hour, gives it a great flavor. I don't dip them in anything, so easy, and I serve with a salad, and corn on the cob.

I coated the chicken breasts in breadcrumbs instead of flour, I think it gets crispier this way :)

As a New Orleanian now living on the West Coast I can use my oven much more because of the cooler temperatures out here. If you live in a 140 yr old shotgun house in Mid City of NOLA you know what I mean.

I would have never considered this 'real' fried chicken (and I have been told I make the best fried chicken in SE La) - BUT it was great!

I substituted 1/4 cup of olive oil and 1/4 cup of butter and it was still great!

Also, back in the day, when I was on a camping trip with the Girl Scouts, our troop leader cooks used crushed corn flakes. I remember that now, even 50 years later. It was a delicious treat.

I tried this recipe with thighs, and they were absolutely scrumptious. I used a tablespoon of Creole seasoning along with some garlic and onion powder. Very flavorful! This will be a tradition in my family from now on.
