GRITS-SAUSAGE CASSEROLE 
1 1/2 c. quick cooking grits
1 lb. pork sausage
2 c. shredded Cheddar cheese
3 eggs, beaten
1 sm. onion, chopped

Cook grits according to directions; set aside. Cook sausage and chopped onion until browned, stirring to crumble. Combine grits, sausage, onion and remaining ingredients; spoon into greased shallow 2 quart baking dish. Bake uncovered at 350 degrees for 30 minutes or slightly longer.
