SAUSAGE AND POTATO CASSEROLE | |
4 med. potatoes, grated for hash browns 2 tbsp. chopped onion 2 tbsp. butter 1 c. sharp Cheddar cheese, grated 1 lb. sausage, cooked and drained 4 eggs 1/2 c. milk 1/2 tsp. salt 1/4 tsp. pepper Fry potatoes and onion in butter until golden brown; place in greased 8 or 9 inch glass baking dish. Top with cheese. Crumble sausage and spread over cheese. Combine eggs, milk, salt and pepper; pour over sausage. Bake at 350 degrees for 30-35 minutes. Serves 6. Can be prepared ahead of time to freeze or refrigerate. Do not add egg mixture until ready to bake. |
