SAUSAGE AND POTATO CASSEROLE 
4 med. potatoes, grated for hash browns
2 tbsp. chopped onion
2 tbsp. butter
1 c. sharp Cheddar cheese, grated
1 lb. sausage, cooked and drained
4 eggs
1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper

Fry potatoes and onion in butter until golden brown; place in greased 8 or 9 inch glass baking dish. Top with cheese. Crumble sausage and spread over cheese. Combine eggs, milk, salt and pepper; pour over sausage. Bake at 350 degrees for 30-35 minutes. Serves 6.

Can be prepared ahead of time to freeze or refrigerate. Do not add egg mixture until ready to bake.

Luv this recipe. I grated my potatoes and fried them in some butter. I added onions and green and red bell peppers and fried them with my sausage. I layered the hashbrowns on the the bottom and then the cheese. I used 12 country farm eggs and 1 cup of milk. Poured that over the top and baked for about 30 minutes... There are so many variations to this recipe... If you luv breakfast for dinner this is the best...
