OYSTER BEEF WITH BROCCOLI 
1 lb. boneless lean beef (flank, sirloin or top round)
2 green onions (scallions), thinly sliced
2 tbsp. each soy sauce and water
1 tbsp. each cornstarch and white wine or water
1/2 tsp. salt
2 tbsp. each salad oil and oyster sauce
1 tsp. sugar
1 head broccoli, cut into sm. florets

Cut beef with the grain into 1 1/2-inch wide strips. Cut each strip across the grain in 1/8-inch thick slanted slices. Combine onion, soy sauce, water, cornstarch, wine, salt and beef, mixing to coat meat well. Let stand for 15 minutes to marinate.

Wok should be on high heat. When hot, add 1 tablespoon of the oil. Cook broccoli for 1 minute and set aside. Add half the meat mixture and stir fry until browned (2 minutes). Remove from wok. Repeat, using more oil. Return cooked meat to wok. Add oyster sauce and sugar and broccoli and stir fry for about 1 more minute.
