CANDIED CARROTS 
8 lg. carrots, sliced
1/2 c. granulated sugar
1/4 c. brown sugar
1 tsp. cinnamon
2 tbsp. butter
1 lg. cooking apple, peeled and sliced

Preheat oven to 325 degrees. Grease 1 quart casserole. Put carrots in saucepan; cove with boiling, salted water. Cover and cook until tender. Drain. Combine granulated sugar, brown sugar and cinnamon. Arrange alternate layers of carrots and apples in casserole, sprinkle sugar mixture on layers. Dot with butter. Bake for 45 minutes or until apples are tender.
