ALMOND SNOW BALL 
3/4 c. butter
1/2 c. sugar
1 egg
2 tsp. vanilla
2 c. flour, sifted
1/2 tsp. salt
2 c. ground almonds
Confectioners' sugar, sifted

Cream butter and sugar; add egg and vanilla and mix until fluffy. Sift flour and salt; add to creamed mixture; stir in almonds (can use walnuts or pecans). Shape into small balls 2/3" in diameter. Place on cookie sheet; bake 20 minutes at 350 degrees. Cool slightly on baking sheet; roll in powdered sugar. Just before serving, roll again in sugar. Makes about 4 dozen.
