DIABETIC APPLE OATMEAL MUFFINS 
Pam spray
3/4 c. oats
1/4 c. oat bran
1/2 c. all-purpose flour
3 tbsp. brown sugar
2 tsp. baking powder
1/8 tsp. salt
1 tsp. cinnamon
1/2 c. unsweetened apple juice
1/4 c. low-fat milk
1 egg
2 tbsp. vegetable oil
1 med. apple, grated
2 tbsp. raisins

Preheat oven 400 degrees. Grease 12 cup muffin tin with spray.

Combine oats, oat bran, flour, brown sugar, baking powder, salt and cinnamon; set aside.

In large bowl combine juice, milk, egg and oil. Add dry to liquid ingredients. Stir in apple and raisins until just mixed. Fill cups and bake 20 minutes or golden brown.
