SPANISH BEAN SOUP 
1 ham hock or ham pieces
1 clove garlic, minced
1 med. onion, minced
4-6 potatoes, diced
1 or 2 pkgs. (sm.) Vigo dressing or 1/2 tsp. saffron
2 or 3 cans Progreso Chick Peas, drained
1 lb. smoked beef sausage or sliced pepperoni

Put everything but the seasoning, chick peas and sausage into a large pot. Cover with water and cook until the potatoes are almost done.

Meanwhile, thinly slice the smoked beef sausage. Add the sausage, chick peas, and seasoning to the pot. Simmer 15 minutes and serve.

This recipe originated in Ybor City, a Cuban section in Tampa, Florida. It's great served with garlic toast.

This recipe is very similar sounding to a recipe that I enjoyed as a young boy living in Tampa.. Every Sunday after church my family and I would go into downtown Tampa and eat at a Cuban restaurant called Valencia gardens. There Spanish bean soup what is second to none and this recipe sure does sound very familiar. I look forward to trying this recipe at home myself.
